San Choy Bow

Once of my favorite veganized Asian dishes. 



San Choy Bow

Ingredients
400g mixed mushrooms - diced/vegan ground meat
1 Tbls oil
1 Tbls sesame oil
1-2 chili peppers - finely chopped
1 tsp ginger - grated
4 shallots or green onions - chopped
Can of water chestnuts/bamboo
1 Tbls Hoisin
1 Tbls Soy Sauce
Iceberg lettuce leaves

Method
Heat oil in wok/frying pan and add mushrooms, cook for 5 mins on medium/high heat.
Add ginger and chili peppers and fry for 1 min.
Add shallots, water chestnuts and bamboo and cook for 4 mins.
In 1/4 cup water mix in soy sauce and hoy sin.
Add to mushrooms. When water has simmered down taste as you might want to add more sauce.
Serve in lettuce leaves.
